An easy veggie quiche is a perfect way to enjoy a nutritious meal without the hassle, making it an ideal choice for busy days when you still want to prioritize your well-being.

The general recommendation is to consume at least 2 to 3 cups of vegetables per day. This amount is suggested by dietary guidelines to help meet the daily requirements for essential vitamins, minerals, and fiber, which contribute to overall health and reduce the risk of chronic diseases.

By using a store-bought pie crust and a simple filling of eggs, milk, shredded cheese, and pre-cooked vegetables, you can whip up a nutritious breakfast in no time. Just mix the ingredients, pour them into the crust, and bake for about 30 minutes. The quiche can be made ahead of time and stored in the fridge, allowing you to enjoy a hearty breakfast with minimal effort. It’s a versatile, make-ahead meal that cuts down on morning prep and ensures you start your day with a delicious, homemade dish.

Ingredients:

  • 1 sheet puff pastry
  • 1 cup Brussels sprouts, chopped
  • 1 cup asparagus, chopped
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 1 Roma tomato, chopped
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions:

 

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, sauté the Brussels sprouts, asparagus, mushrooms, spinach, and Roma tomato until tender and fragrant.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Place the puff pastry into a pie dish, pressing it into the bottom and up the sides.
  5. Spread the sautéed vegetables evenly over the puff pastry.
  6. Pour the egg and milk mixture over the vegetables.
  7. Bake for 30-35 minutes, or until the quiche is set and golden brown.
