Ingredients:

  • 4 rice cakes
  • 1 ripe avocado
  • 1/3 cup red bell pepper, chopped
  • 1/3 cup green bell pepper, chopped
  • 1 cup sliced bella mushrooms
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon lemon pepper
  • 1 teaspoon pepper
  • 1 teaspoon garlic and herb seasoning
  • 2 teaspoons liquid smoke
  • Lemon juice (for avocado)

 

 

 

Instructions:

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add minced garlic and chopped fresh thyme to the skillet and cook until the garlic is browned.
  3. Add chopped red and green bell peppers to one side of the pan and arrange sliced bella mushrooms on the other side.
  4. Cook for about 10 minutes on medium heat, flipping the mushrooms occasionally, until the peppers are tender.
  5. As the vegetables near completion, season with lemon pepper, black pepper, and garlic and herb seasoning to prevent sticking.
  6. Stir in 2 teaspoons of liquid smoke and cook for an additional minute.
  7. While the vegetables are cooking, slice the avocado and scoop it out with a spoon. Drizzle with lemon juice to prevent browning.
  8. Once the vegetables are done, set them aside.
  9. Arrange the rice cakes on plates. On each rice cake, place 3 slices of sautéed mushrooms, 3 slices of avocado, and top with the sautéed peppers.
  10. Optionally, sprinkle sesame seeds over the top before serving.
