It’s crucial to read labels carefully to know exactly what you’re consuming, but I prefer making my own snacks. This way, I can control the ingredients and ensure they are truly high in protein.

Ingredients and Instructions

 

Ingredients:

  • 2 tbsp flaxseeds
  • 1 cup blanched almond flour
  • 1/3 cup protein powder
  • 1/2 tsp sea salt
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 large egg
  • 1/4 cup coconut oil, melted
  • 3 tbsp maple syrup
  • 3 tbsp sugar-free brown sugar
  • 3 tbsp sugar-free granulated sweetener
  • 1 tsp pure vanilla extract
  • 1 cup mini chocolate chips

 

 

Recipe:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare Flaxseed: In a small bowl, grind the flaxseeds using a blender or food processor until finely ground.
  3. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, protein powder, sea salt, baking soda, and baking powder.
  4. Combine Wet Ingredients: In a separate bowl, beat the egg, then mix in the melted coconut oil, maple syrup, sugar-free brown sugar, sugar-free granulated sweetener, and vanilla extract until well combined.
  5. Combine Wet and Dry: Add the wet ingredients to the dry ingredients and mix until fully incorporated. Stir in the ground flaxseeds and mini chocolate chips.
  6. Shape Cookies: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake for 10-12 minutes, or until the edges are golden brown. The centers might look slightly undercooked but will firm up as they cool.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
